Chick Pea Summer Salad

Want a cold side dish salad perfect for summer?

Here's what you'll need!

I found the recipe a few years ago on the side of the chick pea can.
It's easy, quick and everyone loves it as a side dish to summer

Chick Pea Salad
One or two cans of Chick Peas.
Adjust how many cans depending on how much you need.
One large cucumber or two small.
Cut and quartered.
I left the skin on the cucumbers after washing really well.
The skin helps to give the salad  some crunch and keeps the
cucumbers from getting soggy.
One red bell pepper chopped.
Three tablespoons canola or olive oil per can of chick peas used.
Two tablespoons red wine vinegar per can of chick peas used.
Salt, pepper, dried basil flakes and parsley.
Toss well and refrigerate.
Before serving you can top grated Parmesan
or shredded cheese for added flavor.
Serve cold

Great to make ahead for a BBQ!

Hope you're all having a great summer.

***Enjoy the last week of June***

See you next time.

Thank you sweet Celeste for this cool Summer salad which is perfect to transport over an hour down the hill to a BBQ. We are 10 days into our triple digit heat. Cool is exactly what we need to eat. Hubby cooked his pizza inn the BBQ the other evening so we ddn't have to turn on the kitchen oven. I just saw a cooking show where they even made Ceasar Salad on the BBQ and I shall be trying it soon. Summer Sunshine Smiles...<3

Happy rest of the summer to you and your sweetie. Love and blessings, Kitty

Sounds really good. I'm not into eating heavy meals with this terrible heat wave that we have been having.

Hope all is well and you are enjoying the summer.

Nothing like a fresh salad in a hot Summer day !
I use to peel the cucumber (if it isn't organic) and prefer tomatoes than pepper.
Have a cool day !

Hi Celestina, This is the first time I have been to your blog forever, I follow you on Facebook and Google Plus.
I wrote this recipe down and I plan to make it for dinner tonight. We have an over abundance of cukes and peppers this year in our garden. This is great recipe to try and will help use up some of those garden veggies.
